An unfair reputation
In the world of cocktails, few spirits are as infamous as absinthe. Once thought to be hallucinogenic, absinthe was blamed for all sorts of erratic and destructive behaviour, resulting in its ban in several countries. However, while absinthe certainly packs a punch with a higher alcohol content than other liquors, it has since been proven to have no hallucinogenic effects (sorry).
Due to being infused with anise, fennel, and wormwood, absinthe has a strong licorice flavour, making it an acquired tase for many. Because of its bold flavour, absinthe is often only used as a rinse in cocktails, but we think absinthe has main character energy, and we’re putting it in the spotlight. When mixed with lime juice and effervescent bubbles, this once notorious spirit becomes a refreshing spritz that’s sure to be a hit (hitz?). So, sit down with the green fairy and get to know her, you might like what you find.
How to make it
Shake the lime and absinth, pour, top with bubbles.
Pour the absinthe and lime into a shaker and shake with ice. Pour into a chilled glass, top with the wine and water, and enjoy. Garnish with a fennel frond if you are feeling fancy!
Green Fairy Spritz
- 1 oz absinthe
- 1/2 oz lime juice, freshly squeezed
- 3 oz sparkling wine
- 1 oz soda water
- Cocktail shaker
- Add the absinthe and lime juice to a cocktail shaker and shake with ice until well-chilled.
- Pour the cocktail over ice in a chilled wine glass, top with sparkling wine and soda water, then garnish with a fennel frond or lime slices.
